  • 500 grams yellow-fleshed potatoes
  • 2 tbsp flour
  • 3 sage leaves
  • 1 sprig thyme
  • 40 grams butter
  • black pepper
  • salt


  • A few simple steps are enough to prepare potato soup. Start by peeling the potatoes, cut them into cubes and as they are ready transfer them to a bowl filled with cold water to prevent them from blackening. In a saucepan, melt the butter over low heat then add the flour and toast it while continuing to stir until it changes colour and becomes amber.
  • Pour 800 ml of boiling water slowly, stirring initially with a whisk to avoid the formation of lumps. Add the diced potatoes, sage, and season with salt and pepper.
  • Cook over low heat for about 30 minutes, stirring occasionally. Serve the potato soup hot garnished with fresh thyme and a pinch of black pepper.
